Tea Kettle Brewing Instructions

煮出しThis method is used to make large quantities of light bodied houjicha (roasted green tea).
Brewing the leaves in a tea kettle is very common in Japanese households, and often houjicha is drunk instead of water:

Instructions

Place 1 tbsp or 5 grams of tea leaves in a large kettle (8.5 cups or 2L) of water. Bring to a boil and boil for about 30 seconds. Let sit for a few minutes. Strain the tea leaves and enjoy.

Here are a few tips:
1.Houjicha has very little caffeine, so don’t worry too much about strength
2.Do use more than needed tea leaves, a longer boiling time or sitting time draws out a stronger flavor from the leaves
